Winemaker’s notes
The grapes undertake a brief cold maceration process and are pressed delicately. Then they undertake a second fermentation in autoclave, according with the charmat method.
Refining
A few months refining on fine lees enhances its organoleptic properties. The result is a sparkling wine with fine and persistent perlage, good acidity and extraordinary freshness.
